Originally an advanced space faring civilization, they eventually learned from investigating the ruins of previous space civs that there is an inevetable point in technological process where you learn about the cosmic horrors that memetically spread by discovering them and that will destroy your species and possibly the whole universe out of sheer evil malice. The only way they can prevent this is by reshaping themselves into highly intelligent quasi-beasts that refuse to develop technology (including having literacy) and adopt a way of life where they kill off other space faring civs before they can advance too far and doom the universe.

They deliberately create nests and traps to lure in ships to infest and spread among civs for the express purpose to exterminate them. They are much more intelligent than a human but are limited to only understanding how to use already built tech, but not how to built it themselves and will destroy any sources of knowledge, like databases or books, to prevent future civs from leaping too far ahead from pilfered knowledge (hence why all ancient civ ruins are full of fractured and cryptic bullshit but never a blueprint).

The space jockey was just an unfortunate victim of a xenomorph trap. The xenos then landed the craft in a route likely to be frequented by space travel, established a huge nest and activated an emergency signal before going dormant. If the alien had succeeded on the nostromo it would have set course for earth and wiped out mankind.

The viewer will never hear about this because all he will ever see of xenos is them wrecking a place and building nests and sometimes inexplicably shredding books or doing a very smart manipulation of technology (like operating a lift or airlock) while suddenly outwitting their prey on a level a beast would never be able to after deliberately pretending to be stupid to create a false sense of security in their victims.
