The trends are part of what gives something a feeling of being dated.
Action platformers/beat em ups, like God of War or DMC 1 or Asura's Wrath, aren't something that are made today regardless of the ease of doing so on modern systems.
The gameplay trends involved are what makes them immediately identifiable as outdated and retro.
Anyone that made a new game that played like God of War would be doing so in emulation of something that is identifiably outdated and retro.

And people would immediately be able to tell that you were wearing something weird in those miner's dungarees.
Just like if you worse an 1940s double breasted suit with giant shoulder pads and brouge shoes around.
