Before 2007, there were better options than Serra Angel. i.e. Exalted Angle. If you ran the morph it is a strict upgrade of Serra Angel that comes out a turn earlier and unlike Serra Angel can stabilize the game if it came out on turn 6. And of course, this is ignoring the reality that there were a lot of big huge creatures with strong abilities that "cheated" into play like Hypnox, Akroma, etc. Or even pic related which in conjunction with phase out/stifle comes into play on turn 2. Madness cost was a thing that if you simply put one of the discard outlets into play, you could cast some big creature for a reduced cost. Moreover, there was Grinning Demon, a 6/6 flyer for 4 mana that did 2 damage to you each turn. You could also morph it in to reduce the damage you take from it for a turn. Spiritmonger from apocalypse is an example of a 5 cost 6/6 with NO drawbacks. You could regenerate it and change its color to deal with color specific cards/abilities, i.e. anti-green cards, protection from black.

And of course, we can't ignore the reality which is Affinity for Artifacts (Thanks Nosewater) where the expensive creatures were rendered free to play.

The difference between then and now is that you had to use some combo or ramp hard to pay the mana cost to get the extremely powerful creature into play earlier. At least mana cost/additional costs were balanced if JotC didn't print a way to negate it in the next expansion (literally what happened with Dreadnought).

What the issue is, is that there are now low mana cost big creatures that can be played efficiently often without additional costs and with a lot of benefits.
