The way I remember it, at the start of the show Jimmy is an honest lawyer slaving away for chump money taking public cases. Not including the Kettlemans, since they were criminals, his first dishonest act with involving innocent people was when he paid the guy on the billboard to fall off so he could rescue him.
The only reason he did that was because he was desperate for money. Granted, he wasn't at risk of starving or going homeless, but he was coasting along on chump change and there was no sign of that ever changing. He even only met the Kettlemans because he was having to deal with public-case scumbags.
If Chuck had let him have the job at HHM, he wouldn't have been around low-lifes. He'd have been earning good money. He would still have had slippin' Jimmy tendencies and little momens here and there, but nothing major.
I think if he'd gotten the HHM job he'd have pretty much been set for the rest of his life, as a productive, happy citizen.
