I never understood why that was such a problem. Ahsoka was she was 17 when the battle of Coruscant happened (19 BBY), so she was in her mid-30s during the Original Trilogy (0-4ABY) and she was ~52 in The Rise of Skywalker (35 ABY, supposedly).
If I recall correctly, Togrutas live to be ~80, but in Ahsoka's case she could have a reduced lifespan, taking into account that she was a Jedi (padawan) that lived three very difficult years in her youth and then was on the run for most of her adult life. Her dying before turning 60 -be it of natural causes or because she was offed by one of her enemies- doesn't seem too farfetched.
