You're not wrong, but only because TES elves have been hit with divine and magical shenanigans left and right that radically changed them from their Aldmer original strain into what we see today. The human groups never had to endure transformations as radical as them and rarely due to supernatural factors.
With humans, it's basically simple bio-racial stuff.

Now contrast this with Warhammer's Chaos Warriors who have been supernaturally augmented and change to hardly resemble a human anymore.
