Evangelion is like a mixture of ideas that originate in other sci-fi and anime stories, but Eva stumbles upon something great in how it uses very good imagery juxtaposed against its narration to self-consciously prod at the viewer and for deeper purpose. Eva is very self-referential but it often too has well done scenes that work purely in their own right and its visual storytelling and use of sound is very stand out amongst anime as a whole, e.g, the use of the sound of Eva's control switch to punctuate the title card transition of episode 3, "The Silent Phone", which also culminates in the episode's ending. If someone says Eva is a "deconstruction", politely ignore them. While it does at times turn a cliche on its head through jarring imagery, reframing of past scenes, and use genre tropes in a creative way (the teacher's narration of the Second Impact and its aftermath as there's a panning shot of an empty classroom that eventually transitions into Shinji revealing his identity as a pilot and the kids circling around him, asking him about the mech's ultimate attack and such in ep 3), it also subsists on conventions and absolute cliches. Its character writing leaves a lot to be desired in moments as well. I don't know about feeling "honest", but it felt genuinely experimental. Overall, the show has plenty of flaws, but it's good and possibly the best anime tv series.

Rebuild is like an amplification of the original series problems by 1000 and had no reason to be made outside of money. Genuinely garbage (particularly movies 2 and 4) and uninspired. I apparently haven't watched a really good anime released after Ping Pong came out. GQuuux itself never felt like it was interested in telling a story about humans.
