Out of my time playing VR games, these are the only ones worth taking the effort to install or try out:
>Half Life Alyx
Obvious choice if only for interaction quality and production value.
>HL2 VR
Basically HL2 with (some) Alyx level interactions. Only worth playing if you didn't complete HL2 or its Episodes.
>Budget Cuts
Stealth game that makes a lot of use of physical movement, as opposed to spinning an analog.
>Sprint Vector
Sonic X Mario Kart. Servers are basically dead but has some single player levels.
>Elite Dangerous
Being a trucker in space is a vibe, but it's a high sim sickness experience, and asks for a somewhat complicated learning curve.
>VR Chat
Even if you're not social, worth checking out during events like Vket to appreciate the art.
>Ancient Dungeon
Mediocre dungeon crawler with alright interactions.
>C-Smash VRS
Really simple game, Tennis X Pong, but with a really cool vibe and soundtrack. Remake of a Dreamcast game. Not on Steam VR, sadly.
>Beat Saber
Has a lot of good community maps, modding support has been removed on Quest however.
>Lone Echo
Story focused "walking sim" but done with a VR facing design, worth playing.

I want to try Hitman World of Assassination (PSVR2 version), Asseto Corsa, and Synapse (PSVR2 only). Those look cool, but I can't attest to them first hand.
