It's about an immortal all-powerful autist being pampered by her friends while reminiscing about all the social mistakes she made. This makes it the greatest thing ever to a particular segment of the audience, and kinda slow to everyone else.

Half of this is probably just bad writing. We have a demon admitting to another demon, in human speech, that demons only mimic human speech to deceive humans. We have multiple instances of demons using 'father' or 'mother' to get out of trouble, but having no idea what it means. We have assurances that demons are solitary monsters made out of mana like other monsters, but are frequently shown working together and one of their major traits is a need for social signaling. None of this works great as Frieren being wrong about demons, but it fits well with the author trying to do two things at once and not pulling it off very well.

The other half is cope. We see exactly 0 demons who aren't malicious, so even if every single member of their kind isn't entirely evil, Frieren's policy is clearly 99% great and suffers only in the extreme theoretical. The mana thing is likened to nobles wearing fancy clothes to signify their status, not morality, and Himmel's character arc is being an idealistic completionist hero who is wrong about the one demon we see him experimenting with. Demons being irredeemable doesn't contradict that any more than his triumph over the demon lord failing to bring everlasting peace to the land does. He'd have liked to pull it off, but the world doesn't really work like that, even for a legendary hero.
