The Bourne Identity and The Matrix and those millenia-action movies used fast cuts in action scenes to their advantage, as it made actors seem more competent at the martial arts. Speed is the name of the game I guess.
The Mothmans Prophecies 2002 on the other hand had a superb editing and made the film stand out for its visual aspects.

Mark Pellington, the director, had directed some music video, which was probably a key to focus on a nice competent editing synchronizing the audio with the visuals.
