The 5K AS are actually a softer rubber than the regular 5K. So slightly more rolling resistance but much better grip.

Velox tape doesn't work well, if at all, with modern rims. It's too thick. I think it's also shittier than it used to be, like the glue doesn't stick well. If you're going for ultra light weight, polyimide tape (pic related) is a good option. It's available in all sorts of widths and can do tubeless.
