All the ME games for the most part you can just sort mods by most downloads and get whatever is there that looks good. 1 and 2 don't need a whole lot, 3 is just the one that has a lot of bells and whistles you can add.
Here's my list for ME3, though.
A LOT of these are several gigs large and these are just the non_texture mods.
The noly texture mods you really need to worry about are ALOT mod and the Improved Static Lightning (ISL) mod. Unless you're a fucking weirdo and like to use anything other than the default male and female shep. Either way install all gameplay shit first and all texture mods last.
Use MassEffectModder in ME3Tweaks tools category to install texture mods.
