No Cathayans in the Player's Guide, I'm afraid. There is an apothecary career, though. But I'd suggest just defaulting to the Empire (Human) block and reflavoring Lore: The Empire as Lore: Grand Cathay. And instead of City/Provincial Lore pertaining to the Empire you get to be knowledgeable about Shang-Yang or the Old Silk Road. Shouldn't be a problem.
