$5000 in Gold is a bit under two ounces at today's prices, which is 2 oz more than most people have, but is really tiny in the grand scheme of things. My gut tells me that you'd want around 5 oz. to get through a USD collapse scenario comfortably, but I have nothing to really back this up beyond gut feelings.
Another thing worth remembering is that (supposedly) the price for a refugee to get on a boat out of Vietnam in the 70s was 1 oz of Gold, so 1 oz per person whose life you value may also be a reasonable estimation of what you need.
