Cotton is a material not a fabric type. Jersey is a generic knit fabric but there's also terry and interlock and tricot and a TON of others. I'm a big fan of cotton terry but it's too hot a lot of the time. Cotton also isn't an end-all fabric, good wool is a lot more breathable than people think too. I have a medium twist wool overshirt that I wear out all the time, it drapes like a suit jacket but it's flexible.
