I don't keep seasoning mixes. In the first place, I avoid pre-ground spices. I grind up everything fresh. Pre-ground spices taste like fucking sand especially when you buy them from a store where they've been sitting in warehouses for half a year.
Most of my meals are some sort of meat cooked in a liquid so I often just drop in whole spices (bay leaves, allspice, cloves) and grind up some black pepper and a few other spices depending on what I'm making.

Cloves are so good for all sorts of soups and meats. I always add them to my mushroom sauces. Also good for apple deserts like apple pie and such. They pair well with cinnamon.
