The clarity of shapes and colors prior to the modern PBR graphics pipeline were superior in my opinion. Images were easier for the brain to discern and in turn were more immersive.
Have you ever been playing a modern AAA game, been in the zone and very focused on the combat or whatever you're doing and realize... wow I haven't actually SEEN my character or any of the details for 20 minutes..? I've just been focusing on the gameplay. Trying to visually parse 10,000 rocks, leaves, pieces of debris and hyper detailed enemies into understandable information chunks of: place I can stand, place I can't stand, thing I can collect and enemy I should destroy. The graphics fade away and our brain works very hard to figure out what the fuck is happening.
We may have fun, but all the art is lost on us. How often do you look at the intricate detail of your gun in a first person shooter? How often do you look at the sword texture in the Witcher 3? These ultra detailed assets only serve a purpose in screenshots to sell copies. All we need out of game art is enough for our brains to know what the 3D object should represent.
We really don't need more polygons than PS2 games, and we really don't need normal maps or any of this nonsense, just a simple texture to represent what an object is. In fact, I think if we returned to simpler and cleaner game art styles they would be even MORE immersive because our brains could process more information faster.
