I have my N64 connected to my CRT Sony Trinitron via S-Video and it looks pretty sharp besides the textures for obvious reasons, even when I used Composite for the N64 it looked nice.
I have a PSone too (though I only have Composite for it) and I think both consoles look good (PS1 games do have sharper textures but that's obvious).
