For the same reason you root for the protagonist in a movie - you relate and project your experiences onto him and imagine the same thing happening to you.
If it's just the girl there's no one there for me to project myself onto and it leaves the whole thing feeling hollow.
As much as people meme on it this is also why I hate plot-less porn, I need context in order to get properly invested.
