I did my first playthrough on Quality, NG+ and a bit of NG++ on Performance. I think that's the way to go. Get your screenshots done on Quality and then play through the rest on Performance because Performance really does look much worse and I personally don't think the graphical hit is worth the slightly better feel of combat for your initial experience. Everything looks flatter, the particle effects look worse, and it makes the game look duller and less spectacular in exchange for the 60 FPS. The game is a very visually appealing game and losing that means losing part of the whole appeal of the game.
I'm also someone who does not lose their mind over playing at 30 FPS so keep that in mind because it's not a big deal to me and I usually pick Quality over Performance unless there's virtually no visual difference.
