I want to try and rationalize the animal:
most of its protrusions have a different colour compared to the conventional tusks that jut out from its mouth, even its most prominent "tusks" don't actually emerge from the mouth but rather the side of the head, which means that they are actually horns made of bone and/or cheratin, not tusks, we also see fur growing on the bases of these larger protrusions, which points to them being closer to deer antlers, and potentially making them periodical features rather than something they would sport all year long.
in support to this we see very prominent growth lines on the cheratin structures and even bolts or metal plates added by the ogres perhaps to try and reinforce the horns so that they don't break or fall, allowing them to grow much larger than they would in nature, where the animal would wear and break them constantly, either to dig through the ice in search of food or liquid water or during shows of dominance against other males.
They would still be impressive structures, but they would allow the animal to eat from brushes or trees and to drink, assuming the tongue is just long enough to go past the actual ivory tusks.

A similar argument could be made on the mournfangs, where the exaggerated ruggedness of the tusks might be a sign that they grow constantly and that the ogres care for their animals so that they grow way past what they would in nature.
