To be fair, that guy that caused this discussion combined the idea with fey courts and their mythological roots.
Agree, though, the elves own capabilities, magic and the uniqueness of their fey realm should shape this idea as well.
It's also easier to discuss these things in isolation first. Kinda fruitless trying to talk about magic if we don't know what magic the setting and system has.
The elves should also have other cool mounts, like griffins and pegasi
