Adults lose their cool all the time. She's still a teenager, and Toph was being a little shit. Katara was the one with the level head most of the time. She's the one that others looked to for emotional support. In a sense she was the true leader of the group. Even Sokka sees her as a motherly figure. After their issues, Katara is the one who helps Toph with her self-esteem and encourages her to write back her parents. I just don't see Aang as being on that level maturity-wise. He doesn't appear receptive to Katara's emotional needs, at all, and Katara doesn't go to him with them.
