Even the ones who go out of their way to tell the viewer about sanitizing and keeping things clean, when you watch closely they still break their own rules and cross contaminate. In this video Jean-Pierre pats down his chicken with a paper towel, you can clearly see his fingers touch the chicken, then he goes straight to flipping his onions. By their rules, now the handle of that pan is contaminated and every time he touches that pan he recontaminates his hands regardless how many times he wipes them with his sanitized towel.
