Down time or dead air isn't really a bad thing.
Lets Plays are hit-or-miss on whether they cut out the slow parts (and it can be jarring if done badly because it'd feel like you're skipping entire scenes) but entire VODs are fine imo. If a viewer dislikes the quiet moments they can skip them but I doubt anybody is actually watching VODs with their full undivided attention, unlike live streams.
Pic related does drawing streams and there would be entire hours of pretty much nothing being said besides drawing and that's entertaining in its own right.
