I created an image that gives a bit of an insight on the methods. this isn't always the case, as their ARE texture artists who were just that good at handpainting, but this example clearly has many facets going into it's creation.

The really important thing here is the photo collaging, and as stated, neutral lighting is paramount for making things easiest for manipulation and paint-over. I highly suggest taking your photos during a rainy-overcast day, that way even white tones will be easier to get detail from.
