Yeah, it was discussed here that the way Goku acts fatherly towards Gohan was Toriyama thinking about Sasuke, and Goku misunderstanding Gohan and thinking he likes fighting is not an unusual father and son misunderstanding. It wouldn't be surprising if the stamina, and all of those things you listed, were Toriyama changing things up because of his life circumstances.

This one in particular is a big deal for me, since Toriyama worked hard to allow Goku to age. Even during the first time skip, Goku was taller than before, but not that much taller, likely because of Torishima. At some point however, he regretted making everyone so old in EoZ... This can even explain why Bulma is more obsessed with looking younger than before (She showed frustration over saiyans staying in their prime for longer, but words like she never used the dragon balls for it).
