If you never have played as a dedicated Greatshield build then yeah it's going to be hard

Forget about rolling, forget about not taking attacks (block them instead), when in doubt, always Steel Guard, always go for a Guard Counter if you can.
Practice Steel Guard in the roundtable Sparring Grounds, spam that shit until you get muscle memory for it.
Be on the watch for grabs, memory what greatshields are good for what.
Always be on the frontline, always try to draw aggro upon yourself.
