that said, play them in any order but play those:
>V: Vengeance
>IV
>IV:A - compared to IV: worse story and writing, better gameplay. Don't play right after IV because it reuses tons of assets
>Nocturne
With that you are covered when it comes to mainline. You could play I and II as well but they are quite old for todays standards. If you decide to do so, make sure to play the PSX version.
Saving best for last, make sure to check out those spin-offs:
