The Striker glitch being removed is more than counteracted by the fact that you can strafe along with being able to move and shoot. If anything, the remake suffers from expecting you to be moving too often

Leon is now occasionally following up his suplexes/kicks with one-liners and they've added in a bunch of little new bits of campiness like him doing a needlessly risky backflip (as in tries to kick off of a wall as it is actively being chainsawed through) in the Isabella Sisters scene instead of backing away

It can bail you out of moments where you otherwise would've been hit with a crossbow or something, but it will never save you from being surrounded on all sides, won't save you from being grabbed, won't save you from shields, won't consistently save you from dynamite (if they throw it right at you, you can cut the fuse, which IMO is a massive point against the boring tone point), won't save you from the electric batons, and won't save you from losing Ashley. Not to mention that the knife durability system basically exists to give players the freedom to build their upgrades in a manner meant to ignore parrying, or lean into it, and on Professional you can only parry if you time it to a 3-4 frame window.
