I don't care about aging. Well actually I do and it feels like something is wrong with the fabric of existence that we all get put here as living beings, and have to suffer through something so incredibly fucked up as aging and declining.
But all I care about is feeling nimble and fluid. I want to feel light on my feet, I want to feel like I can do everything effortlessly, I want to be able to do my kung fu perfectly, I want to be able to climb as fluidly as a monkey. I would rather live as a highly sprung spring for 50 years and die than decline from the age of 40 like a rusty door hinge and live to be 70-80.
Also if you want to use science in the context of exercise, look at human evolution first. Forget about biochemistry and all that shit. The blueprint for how to function optimally is found in how our ancestors lived. Those are the conditions that decided what traits they passed on and how our bodies function mechanically and biochemically. Those are the conditions that you are built for, keep that in mind when you try to improve yourself. The most you can be is brought out by simulating those conditions, mentally and physically. After that, you can start to learn more about human biomechanical morphology, biochemistry, behavioural endocrinology, genetics, etc.
