Now this one would be difficult. Because I know she would want to help anyone the moment she hears a sniffle or something, since she's that kind.
So something like a European River Cruise during either spring or Christmas. Starting somewhere like Amsterdam and going down the Rhine-Main-Danube making sure she is pampered and taken care of.
