I promised I'd make your dish yesterday and I did.
Overall a nice little recipe. The char from the roasting adds some bitterness, which I happen to like but I can imagine some anons disliking, and it's a little unfortunate that the broccoli lost most of its crunch from being cooked with the sauce. The flavors are nice though, and it's a tasty, saucy and warm dish overall. Maybe more of a autumn/winter dish than a summer dish all things considered. I used some homemade tomato sauce and chicken stock for the thinning out. This recipe goes into the rotation I think, it's novel enough to change things up when I get sick from my usual recipes.
The biggest realization for me was using the collagen to cook with. I've been consuming it mixed with water and hating every second of it, holding my nose and drinking it in one go to get it over with, because it tastes pretty bad. For some reason I assumed heating it/cooking with it was bad due to the denaturation process, but I looked it up and apparently that's not an issue and it basically disappears into the tomato sauce, with basically no aftertaste.
So more than the actual dish, you've given me a way to consume my collagen without wanting to kms, so thank you very much for that anon, it's legitimately been the most unpleasant part of my diet so far.
Overall I'd recommend cooking it, it's a nice recipe. If not now, then when autumn truly comes.
