There are two reasons for this:
1. Nobody in the industry genuinely cares about representation and just wants to score good boy points.
2. The industry is dominated by dudebros, and blue-haired dykes who only want to see themselves on screen. Occasionally they will throw people a bone by having a middle-aged traditionally masculine gay married couple because they find feminine men repulsive.

Lower Decks is impressive because it's the Rosetta stone of shitty 2020s adult animation. You've got the shitty generic artstyle, lesbian shipping (and an almost complete lack of gays because the writers are cowards), tropey millennial writing (quips, found family, obnoxious self-awareness, pop culture references masquerading as jokes). The only people who watched it were braindead nostalgia gobblers and Tumblrite gay shippers.
I'm glad it got canceled but it's shitty that it went as long as it did because it was attached to a popular IP, whereas original shows usually got canceled after one or two seasons.
