The airbenders are literally pacifist and ascetic monks, all three of those things are historically mono-white. They believe in charity and helping those in need and abhor killing, instead preferring to render opponents incapable of harm. Ozai is literally defeated by Aang hitting him with a permanent Humble/Heliod's Punishment/Faith's Fetters effect by permanently revoking his Firebending, rendering the unstoppable fire lord into just a regular guy.

All of these are white effects and themes. White has monks, white has charity, white has nonviolent removal, white has pacifism, white has ascetics eschewing material comfort, white has flying and love of the open air, it fits just fine.
