I think of Klondike Bars, as I’ve always heard them called, as just a rectangular slab of vanilla ice cream coated in chocolate, no sandwich/wafer/biscuit element involved. Perhaps they did or do also make an ice cream sandwich version, but I’ve never noticed it. I assume they still exist.

I’ve seen variations on the ice cream sandwich all over Europe, where I lived for half my life, including the basic/classic format in OP’s picture. My children liked the Oreo version when we lived in Switzerland.

In my current home base of California there’s a popular local version called the It’s-It, which is an ice cream sandwich made with oatmeal cookies and coated in chocolate. They’re pretty good but I’ve always found the chocolate coating an unnecessary messy addition that adds little value to the flavor.
