Wyrmstooth is one that comes to mind right away. Bruma is nice to look at but it doesn't have much to do. SIRENROOT, Moon and Star and Penitus Oculatus are also good ones to start off with. I have a list of quest mods I've enjoyed, so you might find some you like in it: https://rentry.org/ngbnk3k7

CTD at the mani menu? Are you sure you're not missing any master files? Check MO2 for any errors or warnings. You'll see like a red triangle with a ! in the middle that will tell you what master file you're missing.
