If the F35 managed to "intercept" or "repel" the Russians it is because the MiG 31 was casually cruising.
The F-35 has never reached mach 1.6, its claimed top speed.
They have tried mach 1.4 at which point parts of the aircraft started to melt.
The MiG 31 tops out at mach 2.8 in peace time, but can push beyond mach 3.

How do you intercept something that flies twice as fast as you?
