It's film vs. digital. The Brutalist came out and I immediately noticed it LOOKEd LIKE A REAL MOVIE. It wasn't covered in a grey haze, and it had actual shadows and contrast, and it's because it's shot on film.
Digital is a technical improvement, but it captures everything and defaults to a grey haze. you need to tweak it afterwards, and often they seem to leave a lot of the grey haze in, or tint it, rather than trying to capture reality or the older film look.
