Family Guy didn't come back from cancellation just because of [adult swim], it also got a ton of DVD sales which showed FOX there was still a huge market for it:

Plus FOX in general has a way better track record with their animated shows than the likes of WB and UPN did. "Animation Domination" is kind of an apt name for their Sunday cartoon block since it's like the other networks don't even try anymore.

Regarding the specific shows, the PJ's did get 3 seasons in total but 2 of them were on FOX before it switched to the WB. It was notable enough it at least got a cameo in the Simpsons. But with it's claymation style and having Eddie Murphy involved it had a high budget which gave it all the more reason to get cancelled.
