The original RE1 may be what you're looking for. The mansion is very open and some areas can be skipped entirely. Also, some story events happen differently depending on how you explore. The remake has some openness as well but to a lesser extent.
In both the original RE1 and remake, the mansion gets harder the second time you go through it because of the hunters.
