Level 11 is usually the best place to cut off. It simultaneously cuts off casters from getting 6th level spells, while also giving martials their extra 3rd attack. I also feel like in 3.5, the game got condensed and expanded from 2nd Edition. Being 20th level in 2nd is like being level 9 or 10 in 3.5.

Also, at CR 11 is where you start getting into the really crazy enemies, and it's always fun to fight them.

It was bound to happen. When you fail to gatekeep your hobbies and allow them to become mainstream (especially in today's vapid, superficial culture) just to feel validated by the same people that made fun of you and never really cared, you get what's been happening to DnD and ttrpgs atm.

Then again, what CAN you realistically do when the companies that own these games (most famous examples being WOTC and Paizo) are left-leaning in their rhetoric themselves.
Mercer and his theater kid group may have brought in the unrealistically high production and storytelling values, but they also found a very fertile ground to grow their "modern" tropes in the current landscape of ttrpgs.
