If you're going to be pounding this thing regularly for work I would not rely on a subaru to do it.
For hopping over ditches and potholes on ungraded surfaces ground clearance will generally make more of a difference than anything else. Mud basically depends on lower weight and higher contact patch; in other words ground pressure. Something that can fit 30-33 inch wheels would be convenient since most 'all terrain' rubbers only come in those sizes.
Ford Mavericks are cheap, have great gas mileage, and come in AWD.
Mazda 3's or CX-30's are even cheaper and also have AWD.
As usual tyres tend to make more of a difference than anything else.
The mazda has 25-27 inch wheel sizes with 16-19 inch rims stock, which means your best option would be CrossClimate 2's in XL load size.
The maverick has 28-29 inch wheels with 17-19 inch rims, which is something of an awkward spot, but Destination A/T2's are a great tyre, and come in those sizes, which is convenient.
