So this is something that tickles my 'tism, as a massive nerd, the living history hobbyist, and modern hunter.
If you want to be realistic about it, majority of non-sporting hunts tend to be risk averse, utilizing traps and long distance manners of dispatching such as projectile weapons. To keep the feel you're going for, my suggestion is to look at real historic hunting and animal bloodsports, which have significantly documented systems for dispatching dangerous animals in various ways. This includes:
>Boar and bear hunting with both spear and boar sword
>African elephant hunting with sword on horseback
>Whaling
>Bullfighting
Etc.
