Nosferatu did run like shit with several previous versions of Proton, but it should be fine with the latest.
In my experience, it actually ran well with Proton 5.0, but performance was inexplicably horrible with several Proton versions after that (5.13, 6.3, and 7.0 at least). This was super shitty because the performance problem appeared in exactly the same Proton versions that seemed capable of playing the opening cutscene out-of-the-box (using transcoded video files from Valve if I'm not mistaken). The cutscenes can be fixed by running

and prepending
>WINEDLLOVERRIDES="winegstreamer="
to the launch options, so when I played the game a few years ago, I just did that and used Proton 5.0.
However, with Proton 9.0, the performance issues seem to be gone. Moreover, Proton 9.0 has D8VK, so performance can be improved further by putting
>PROTON_DXVK_D3D8=1
at the front of the launch options. Proton 9.0 also uses transcoded videos from the shader cache, but you still might want to do the tweaks to fix the cutscenes. Although the opening cutscene for the Steam version just works, not all videos have been transcoded yet, and so (last time I checked) I was still getting that color-bar test pattern for some later cutscenes. I've heard that Valve will transcode a video if enough users get the color bars, but the game is pretty obscure and most players probably quit before the end. At least there's another fix for it.
