I tried to make macaroni and cheese but I fucked up pretty bad. I wanted to use this fancy beer flavored cheddar I bought and also include bacon and caramelized onions. I was worried that the cheddar was too hard and would split the sauce so I also planned on using a packet of powdered cheese taken from a box dinner so the emulsifiers in it would help keep it together. unfortunately I messed up cooking the bacon and onions so the bacon ended up too brown and the onions not brown enough. the overdone fond turned my sauce a disgusting brown color and the cheese powder wasn't enough and it immediately turned into an oil slick as soon as I added the real cheese. I managed to rescue it sort of but the taste is only about 60% what I was intending and it looks like vomit.
