Adding a lot of crushed black pepper is what are you supposed to do. Go ham on it. You could straight up slowly caramelise onions instead of deep frying them in 15 minutes. Potatoes themselves should be somewhat thinly cut so you have more area to fry. You could go for it and cut them on the mandolin, like crisps. Texture of the potatoes is going to change whole impression of the dish. But I would advise against cutting them too thick. And I personally adore sour cream dollop, always perfect with potatoes. Also, when I feel like it, I dice single sausage into small cubes and toast them, adds a nice punch.
