Guts in the fucking Golden Age killed 100 bandits in a single night and only got stronger since then. And yes he literally does react to (though he admittedly can't perceive) a straight up supersonic opponent and literally does blatantly outspeed arrows, again in the first arcs of Berserk. Dimitri does not.
