You've reached the point where most people realize whats up and start to explore older fighting games. SF6 is very rigid and structured and relies on forcing VERY simple (but very oppressive) mixups without room for creative solutions. Look for games with open-ended mechanics that lend themselves to creative application.
It may be a meme at this point but 3rd Strike is the easiest example to point to. The game has lasted for so long because its design and mechanics make every match fresh and no two players alike. Guilty Gear Accent Core +R is another one that gives me that feeling. Whenever I lose I never feel like I was out of options or put myself into an unwinnable situation.
