We don't actually have any idea how sapience works, for all we know we just got really lucky or there's something fundamentally biological behind the ability to self-reflect. Alternatively you're 100% correct and once we reach a certain threshold of complexity AI will genuinely gain some kind of self-awareness and begin to behave in ways that defy its core programming. We just don't know.

As an aside it really chafes me how people mix up sentient and sapient. A fly is sentient, SENTient means the ability to SENSE things. Sapience is self-awareness and it's literally in our species name, Homo Sapiens.
